Lately I have felt that our dinners have been lacking a little sparkle... Sure, we have an adorable 8 month old. Come 7pm we are exhausted and would probably eat cereal and call it a night... But their just minor details right?
Inspired by researching Spanish and Mexican recipes for my Husbands forthcoming birthday, I stumbled on to this one and used it as a rough guide.
I used what I had in the fridge for the filling, mushrooms, corn, avocados, BBQ chicken, tasty cheese and red capsicum.
Flipping them requires a certain finesse.... The first attempt suffered what I call, the 1st pancake syndrome. An acceptable failure! The one to learn from!
They were amazing! And the sour cream and salsa hit it out of the park x
