Happy Birthday Baby... Sorry I forgot x

I feel like a terrible wife...
I hardly slept last night or many others before that, however, this is certainly no excuse. But, I do get 'slightly' dramatic without sleep!

I forgot it was my adorable Husband's Birthday this morning....
Firstly, I begged him to get our beautiful son up so I could sleep a bit longer, told him to make me a huge coffee, complained about his snoring and demanded that he sleep downstairs tonight!

I had planned a Birthday party for this Saturday but, I just forgot that today was the official day of birth 43 years ago x

Thankfully, my husband sees the funny side of my antics on a daily basis... and he is looking forward to me forgetting many more of his Birthdays in the future!

On a serious note though, I am truly blessed to be married to this wonderful man. He challenges and inspires me everyday and I am forever thankful to have him in my life xoxo


P.S No seriously, your still sleeping downstairs tonight x

Finger food huh? Thomas has the greatest solo man food fight when given vegetable ammunition. He has mastered the discus and shot put throw... So far his best effort is roughly a meter and a half!

Quesadilla Wednesday...

Lately I have felt that our dinners have been lacking a little sparkle... Sure, we have an adorable 8 month old. Come 7pm we are exhausted and would probably eat cereal and call it a night... But their just minor details right?

Inspired by researching Spanish and Mexican recipes for my Husbands forthcoming birthday, I stumbled on to this one and used it as a rough guide.
I used what I had in the fridge for the filling, mushrooms, corn, avocados, BBQ chicken, tasty cheese and red capsicum.

Flipping them requires a certain finesse.... The first attempt suffered what I call, the 1st pancake syndrome. An acceptable failure! The one to learn from!

They were amazing! And the sour cream and salsa hit it out of the park x

Location Newtown

Today was excellent! I got to spend the day walking and eating my way through Newtown with my three favorite people.
Three short years ago we moved to the suburbs to start our family. Today we came back and saw how much things had changed... we loved it x
